Prosciutto & Sage Stuffing

No Christmas turkey is complete without a great stuffing to add even more flavour. I hope you enjoy one of my favourites with prosciutto and sage.

  • 2 x onion diced

  • 2 x stalks celery diced

  • 100g Prosciutto- diced

  • 30g fresh sage finely chopped

  • 10g fresh thyme finely chopped

  • 20g rosemary finely chopped

  • 20g parsley finely chopped

  • 150g butter

  • 500g bread crumbs (home made are best)

  • Olive oil

  • Sea salt/Murray Salt and pepper

  1. Gently cook your chopped onion in the butter until translucent and

slightly caramelised, add the diced celery and bacon and cook for a minute or two.

  1. Add breadcrumbs, garlic and finely chopped herbs. Mix all of the ingredients together and stuff into the cavity of the turkey.
